Cowboy Breakfast Sandwich

I was going to try out a new scone recipe and I don't like to try out a new recipe by its self in case it doesn't turn out I will have always have a fall back because as you know this fat momma cant be hungry or it ain't pretty. Little did I know at the time I didn't have any bacon for the Bacon Scones...uhhhhhhh I guess that will be next time.

Cowboy Breakfast Sandwich
Breakfast Sausage
Eggs
¼ cups Half-and-half
Salt And Pepper, to taste1 jar Jalapenos
Butter
Texas Toast
Sandwich Spread Of Your Choice (mayo, Miracle Whip, Spicy Mustard)
Cheese Slices (your Choice)
Start by frying patties of breakfast sausage.
While the sausage is frying over medium heat, crack a few eggs in a mixing bowl. Splash in 1/4 cup half & half. Whisk together and then add plenty of salt and ground black pepper.
Flip the sausage and let it continue cooking.
Next, drain some jalapeno slices. (Warning: if you grill the jalapenos as demonstrated, make sure your stove has proper ventilation/exhaust. You’ll have to trust me on this: the fumes that result could seriously rival the most potent chemical weapon. If your stove doesn’t have ventilation, you might want to open a few windows…or put on your gas mask.)
Dump the jalapenos onto a very hot skillet or griddle. Let them sizzle for a couple of minutes and then add a couple tablespoons of butter for flavor. Continue cooking for a couple more minutes and then set aside.
In the same skillet or griddle, melt a couple of tablespoons of butter and place a few slices of Texas Toast on top. The key here is to use plenty of butter as you grill the bread. When you flip the bread to the other side, go ahead and butter up the pan again.
Remove the sausage from the skillet when it’s completely cooked, then drain most of the grease from the pan and set sausage aside. Pour the eggs into the skillet and with a spatula, gently fold the eggs around, allowing them to cook.
When the Texas Toast is nice and grilled, spread whatever sandwich spread you’d like to use onto the bread. Top with a sausage patty, eggs, jalapenos, and cheese.
Finally top with another slice of Texas Toast and then return the sandwich to the warm griddle to thoroughly heat everything.
And then enjoy!
Yes I know that I have crumbs and this isn't a nice clean shot but with 3 kids, homework, AR, and its been one of those days I didn't care at the time but now I wish I did because my OCD is bugging out.

*Notice I left off the peppers because I knew the Farmer didn't need heartburn and he cant say no to spice. He is the only one who eats them too so I wasn't really worried about it Whoops. But hey if my laziness will help his digestive system why not :) See I always got his back


Can you believe that after all this time I haven been waiting to get jury duty and finally got it that made a guilty plea and I didn't even have to go. Are you serious, what? Ill probably never get picked again and everyone I know doesn't want it and gets pick once a month seem like it.

Im Rich

Over the weekend Maci had a barrel run. I wasn't to much excited about it being that it started at 9am and it was an hour and half away from our house which puts us getting up at 6:30am on a Saturday.Also we would miss the Derby :( but being a rodeo mom what is a girl to do but do it. I knew it would be a long hot day and didn't want the young 2 kids to get restless and suffer so Rhett stayed with the farm working on the farm and Mauri stayed with Mother n Law and they worked out in the yard and garden. When we pulled up I saw that they had a Snow Cone stand so I knew then it was going to be a good day.
Maci had a great run but when she came out of the alley I saw the look on her face and she wasn't to happy. I told her she did really great and why was she disappointed. After she ran at 2:30 we decided that was enough for us and didn't stay until it was over. To her surprise later that day once it was over they figured times and gave us a call to inform her that she had placed 2nd in 4D and won a whopping 33 bucks. She was so excited because this was her first check she has ever won on barrels. All nite all we heard was I'm rich I'm rich when are they mailing my check because I'm rich. I so wish 33 dollahs was rich. We are so proud of her.


We will be on the road againt today in Crowvillefor a stock horse lesson and then next weekend in Eros for another Barrel Run.

Ive got jury duty so depending on how that goes this week may be a  slow blog week but hopefully they will get me out of there quick and not waste my time.

DIY project

I found a desk in the Potterybarn catalog that I wanted to put into Maci's room but didn't want to pay that much for it so I took it to my papaw and he made it for her. I'm not a DIY kind of girl it's not my thing. I think a lot has to do with I'm not artsy or creative. Or most DIY projects are time consuming and my ADD doesn't do very well.                    
                    I ordered Zebra knobs to go on the drawers.
Ok I know this desk is showing gross finger prints and my OCD is going crazy but I just moved it back in her room grabbed my camera took a quick picture and I'm sorry I didn't clean or put knobs on first.
 then needed a chair and my brother n law was getting rid a table and 4 chairs so I decided that I would be the receiver and give one of  his chairs a makeover and if I liked it then it would be the desk chair. I mean I have 4 to try it in so here we go. HaHa. I researched on my trusty Pinterest and found a few different things so here we go.
I ordered zebra fabric from fabric.com and covered the cushion


I spray painted this with a grey RustOleum primer

I will do a post on Maci's complete room once I get everything back together and in order. It is a work in progress. We took in the playroom and turned it into her room so my kids no longer have a play room and thank goodness because that means less room for toys and junk. Whooo to the Hooo

Last Dance

My baby brother had his Senior Prom last weekend and I still cant believe that he will be graduating high school in 2 weeks. Bradley and his sweet girlfriend Kirsten have been together for over a year so they are serious. LOL Well you never know because the farmer and I were high school sweethearts and look at us 10 years later. The kids and I went over to my parents to help with all the fun prom stuff. Oh something funny about my brother is that he has always had the same hair cut and when Justin Bieber came out he was mad because Bieber jacked his swagger hair and then it really became to make him furious when little kids thought he was JB. He still think JB needs to pay him for jacking his hair and making millions of the Biber hair when in reality B-Rad-Geezy had this hair way before his time. LOL
I promise we had no clue what color her dress was, she wanted it to be a a surprise.
Looks like we planned it, we all laughed when we saw each other.
                            {SO can tell that I put on 10 flipping pounds in the last month.. uhh}

I still cant believe how my baby brother has grown up and being a lil man. I'm so proud of him. He is the nerd of the family and I wish was as smart as him. He will attend LaTech on a full scholarship for his grades and ACT WhoopWhoop I am so proud!



Ironically I had this post written and title Monday night and ready to go....then last night I came across a blog that will forever change me. I feel the need to share so please make sure you check it out if you haven't already.
Avery Can lost her battle with SMA Monday. I am so glad that they are raising awareness because I had never heard of it until I came across her blog.
