I love good ole Cajun cooking but sometimes I just don't have the time for all these delicious recipes. I have finally found a perfect way to get my Cajun on in a hurry and super easy.
Normally I would use Louisiana Cajun Etouffe mix and go directly by the package directions until I had Sunday dinner at the SILS and had fixed it but I knew it didn't taste the same and it was creamier and richer and I was in love. I just had to figure out how she did it and give it a try so without further I do......
SILs Louisiana Etouffee
2 packages of Louisiana Etouffe mix
2 sticks of butter
brown on low heat in boiler until a nice rich rusty color
add 4 cups of water
1 can cream of mushroom soup
1 package of crawfish tails about a pound
1 package of baby shrimp about 8oz
Mix together and come to a boil, stir often
After mixture comes to a boil, reduce heat to low and cook for 15 minutes.
add about 1/2 cup chopped green onions
Remove from heat and let stand 15 minutes
Serve Over Rice an enjoy
As far as the rice here you go simple but scrumptious
the cube will add an extra flavor to rice without tasting like chicken
and for another fast and easy secret I add these
lay foil down in your pan and then makes for easy clean up
Add a salad and you have yourself a feast
I don't mix my rice into my Etouffee because I like to freeze the left over Etouffee.
When ready to eat again thaw warm on low heat and make another batch of rice.
I can easily get 2 meals out of this
