Cajun Quick Fix


I love good ole Cajun cooking but sometimes I just don't have the time for all these delicious recipes. I have finally found a perfect way to get my Cajun on in a hurry and super easy.

Normally I would use Louisiana Cajun Etouffe mix and go directly by the package directions until I had Sunday dinner at the SILS and had fixed it but I knew it didn't taste the same and it was creamier and richer and I was in love. I just had to figure out how she did it and give it a try so without further I do......
SILs Louisiana Etouffee
 
2 packages of Louisiana Etouffe mix
2 sticks of butter
 
 
 
brown on low heat in boiler until a nice rich rusty color

 
 
 
add 4 cups of water
1 can cream of mushroom soup
1 package of crawfish tails about a pound
1 package of baby shrimp about 8oz
Mix together and come to a boil, stir often
 
 
After mixture comes to a boil, reduce heat to low and cook for 15 minutes.
add about 1/2 cup chopped green onions
Remove from heat and let stand 15 minutes
Serve Over Rice an enjoy
 
 
 
 
As far as the rice here you go simple but scrumptious
the cube will add an extra flavor to rice without tasting like chicken
 
 
and for another fast and easy secret I add these
lay foil down in your pan and then makes for easy clean up
 
 
 
 
Add a salad and you have yourself a feast
 
 
 I don't mix my rice into my Etouffee  because I like to freeze the left over Etouffee.
 When ready to eat again thaw warm on low heat and make another batch of rice.
 I can easily get 2 meals out of this

Country Bumpkins

The kids were getting a little stir crazy inside we Daddy suggested we should go squirrel hunting and that Rhett and Mauri could shoot their BB gun in the tree line at birds. Of course they were all in agreement with that so off we go.

Kindo of had to see but Rhett propped his gun up on that tree and now taking a pee
You cant do that in the city or they will get you for indecent exposure 
 
Now the squirrel hunting is underway, off the go 
 
Being Maci is older and has a lot more gun experience she went with a 12 gage
Just using her Daddy to prop up on and of course he loved every minute of it.

Rhett got him some squirrels and couldn't wait to take them to Mamaw to fry them up
I don't eat or cook them so off to Mamaws they go



Doing things like this is not only a family bonding time but a time to teach gun safety and practice it. I am a believer in repetition so this provides not only hearing it but putting it to use and benefits the kids so much.
I realize how lucky we are to be able to live where we live and the sacrifices are well worth it in my book.

Momma has still got it

A few months ago the kids went skating for a birthday and while there I was trying to help them improve and the kids didn't really take me serious. Once we got in the car and was talking about how much fun it was and I started telling them my skating memories. The didn't to much believe me so I said right then and there that while out on break we would go and I would show them. Over Thanksgiving we didn't get to make it plans got changed. When I got a call from one of my friends who our kids love and adore other as we do we had a skate date.
As I laced up my skates I was thinking surely this is just like a bike once you do it it will come right back to ya. I couldn't let the kids think I was nervous so I took to the rink and bam Momma has still got it. Once I went around a few times and got the feel of it again I decided I would either show them my old tricks or make them laugh. It could only go 2 ways. I did it I could still skate backwards and then it was time for the Limbo and I gave it a try also. Yes we did it and beat most of the kids too. My friend and I laughed and we had the best time making memories with our children.

We are rivals but can love each other through it and that's what makes us





It was so much fun and I know I am going to be very very very sore but well worth it. I think I need to add this to my workout routine. I don't know why I don't take the kids more often but I think this is the starting of our skating habit.

New Years Eve

I couldn't remember the last time we stayed up and actually made it to midnight and while talking with the hubs we decided to go and make a date night out of it. I didn't know what we were going to do but I knew I wanted Sushi so we made reservations at Ronin Japanese Hibachi Steak & Sushi and was just see how we felt.

After we ate we decided to swing by a friends bonfire and hangout and enjoy everyone's company.

It was fun and I am proud to say I made it until midnight yal. Whoopwhoop that's how I know 2014 is going to be an awesome year.

2014 Goals

2014 Goals:
 
1. Live a healthier lifestyle when it comes to food. Each year I say loose pounds and it never works due to my eating habits so this year I want to change my eating habits because they hold me back from reach my weight loss goals.

2.  Be more creative and work on some Pinterest projects

3. Get together and book a trip to New York for September or October. Put back money each money for some New York shopping

4. Last year I canned a few peaches and made jelly, this year I would like to can more than just peaches. I would like to can Bread & Butter Pickles, more strawberry jelly, more peach jelly, more sliced peaches.
Stocking up for Winter. She has a great recipe for making/canning tomato soup.

5. Drink more! I'm not a drinker and so I could go on 20oz of water all day and not bother me but it makes my skin dull and dry, my body dehydrated and I know it isn't healthy but the only time I drink is when I eat so I need to make a conscious effort and drink more.

6. Use my DSLR Canon Camera more instead of always using my iPhone and not downloading them and then deleting them. When I got my phone my camera went on the back burner and I never take it anymore so I need to put that baby back to use.
Canon T3i. Got this cam as a grad gift. I love it so far :)
 
7. Schedule Family pictures for May and have them done in the pasture or around the farm. We haven't had family professional pictures since ...I'm so ashamed to say this but since 2008. Yikes that's bad.
I want to do a walking away shot with the four of us at the wedding.
8. Be finished with all my Christmas Shopping November 1st. I want to start in August/September and be completely finished November 1st so I can sit back and enjoy the holidays without worrying if I forgot something and what all I need to get done.

9. Try and be better about going out to the Farm and helping and also taking pictures.

10. Last but not least BLOG MORE! Last year was a complete blog fail so this year I want to take more time for blogging. Maybe even have a domain, you know spruce it up a little bit. I just need to be a better blog and also better on my blog reading.

I think I need a Bonus Goal, I always did love those in school. So my BONUS goal is to finish a 5k
